I love enchilada’s, my favourite restaurant at the moment is Cactus Jacks and they do a mean enchilada.
But I always use beef mince when I make them so recently I decided to use chuck steak and cook it in the pressure cooker.
All I can say is YUMMO!!
And for hubby I added a rice salad. All I did was use chicken stock to cook the rice in and then when serving I added avocado, red onion, sweet corn kernel's and chopped cherry tomatoes.
This is how I am going to serve them all the time now, lol!
